By the way, I believe paying triple for both 2 and 12 makes the field a 0% HE bet.

No matter what system they use, you gotta assume that if the payouts are the same, then the system produces 'rolls' in the same random frequency as real dice.
The only question is this: Does card removal affects the odds of the remainder of the shoe? I.E. It might be sufficiently random for the entire shoe, but a card counter might be able to get an edge mid-shoe. Obviously, if it's possible, then the counter would need to track six counts....
